Farm to pool at six senses laamu a menu as fresh and organic as it gets

LAAMU, Maldives – March 22, 2017 – Six Senses Laamu features an organic garden where 40 different herbs, vegetables, salad leaves and micro-herbs are grown. Chef Martin and his culinary team have teamed up with the gardeners to create a daily-changing menu, entirely based on fresh and organic ingredients, served by the pool at Sip Sip.

The menu features a different starter, salad, pizza and dessert every day for guests to choose from. “The idea is to offer guests an additional healthy set of light dish options to enjoy by the pool with locally sourced ingredients.

Everything is prepared simply with no addition of processed or modified foods,” says Martin, executive chef.

Chef Martin shares one of his favorite, so far, Farm to Pool recipes for Goats’ Cheese Salad.

  • 20 grams of mixed lettuce leaves
  • Five cherry tomatoes cut in half
  • Quarter of an onion
  • Three goat’s cheese patties

Pane the goats’ cheese in flour, egg and panko breadcrumb and then shallow fry the goats’ cheese, until golden.

Bill’s previous experience includes working in several world‐renowned brands back in his native Australia including LVMH, One & Only, and ACCOR properties, and other unique environments and locations. Together with the wealth of experience acquired from such high‐end brands, Bill also comes from a strong Food & Beverage background which he is seamlessly incorporating into OBLU Helengeli’s operations.

When asked about his first impression of OBLU at Helengeli, Bill said;

“I really fell in love with straightaway. It is fun, funky, fresh but still has that relaxed island feel. The House‐Reef is really just spectacular and being able to see dolphins almost daily 50 meters from breakfast is just inspiring! Helengeli Island encompasses the true essence of The Maldives! ”

OBLU at Helengeli follows Atmosphere Hotels & Resorts core brand philosophy of ‘The Joy of Giving’ which is deeply interwoven into the resort’s customer experience and this is clearly shown from the positive feedback and sheer number of repeater guests that have returned to Helengeli since it’s launch in November 2015.

Aside from the beautifully contemporary and vibrant design style of the resort, Bill believes the core strength of OBLU at Helengeli is the staff and how they are so genuinely engaged in providing guests with ‘best in class’ service and ensuring each guest have memorable experiences during stay. OBLU having a significant number of repeater guests specifically returning because of individual staff members is truly inspiring to him.
